Lemon Buttermilk Donuts with Blackberry Glaze

Spring is in the air and berries are starting to make their way back onto grocery store shelves. Even though it's a bit early to make jams and jellies, or even cobblers or shortcake, I was chomping at the bit to incorporate some into a new recipe. These lemon donuts with fresh blackberry glaze were the perfect combination of flavors for a spring breakfast treat. Don't let the bright purple color fool you, there's no artificial dyes here. Just plump, juicy blackberries.  Oh, and trust me... you'll want to use the reduction technique with every berry-flavored frosting or glaze from now on! 

Carrot & Apple Cupcakes

I wanted to tweak an old standby by turning a traditional carrot cake into kid-friendly cupcakes but with the "adult" cream cheese frosting. I reduced the amount of sugar needed by adding shredded Fuji apples to the mix and loads of fragrant spices. Whipped cream was whipped with cinnamon and folded into the classic, dense cream cheese version creating a light, dreamy texture. 

Toffee & Butterscotch Oatmeal Cookies

These butterscotch oatmeal cookies win over just about any cookie lover with its crispy exterior and chewy inside; without a raisin, nut or chocolate chip in sight. Plus, they have a little added crunch and caramel flavor from the toffee bits. It's the sprinkling of sea salt on top that really seals the deal though!

Perfection in pie form! We ate slice after slice for three days; every bite was as delightful as the first. Velvety tart filling on a mildly sweet shortbread crust that made everyone smile with satisfaction. Meyer Lemons are truly the star of the citrus family!

My favorite banana bread recipe is tried and true, straight from one of my vintage cookbooks.  Simple & satisfying, never dry, always perfect.  I love the original but I've made a few changes to amp it up; giving a little twist to a great classic. Baked Eggnog Donuts

Right after the holidays we still had a bunch of eggnog left over so I thought the best way to use it would be to whip up a quick batch of baked Eggnog Donuts for New Year's morning!  The kids were nuts for them saying "they taste like the Christmas cookies!" Starting off a new year surrounded by smiling faces makes me think a "Christmas Cookie" breakfast was pretty perfect.
