Coconut & Vanilla Bean Donuts

Our most requested cupcake recipe might have just become our favorite donut recipe as well! The key ingredient is reduced coconut milk; ensuring lots of sweet, coconut flavor throughout the cakey, vanilla-speckled donut. There's also some of the milk reduction in the glaze for good measure. Finally, each little donut is crowned with sweetened coconut flakes.

Lemon Buttermilk Donuts with Blackberry Glaze

Spring is in the air and berries are starting to make their way back onto grocery store shelves. Even though it's a bit early to make jams and jellies, or even cobblers or shortcake, I was chomping at the bit to incorporate some into a new recipe. These lemon donuts with fresh blackberry glaze were the perfect combination of flavors for a spring breakfast treat. Don't let the bright purple color fool you, there's no artificial dyes here. Just plump, juicy blackberries.  Oh, and trust me... you'll want to use the reduction technique with every berry-flavored frosting or glaze from now on! 

Carrot & Apple Cupcakes

I wanted to tweak an old standby by turning a traditional carrot cake into kid-friendly cupcakes but with the "adult" cream cheese frosting. I reduced the amount of sugar needed by adding shredded Fuji apples to the mix and loads of fragrant spices. Whipped cream was whipped with cinnamon and folded into the classic, dense cream cheese version creating a light, dreamy texture. 

Toffee & Butterscotch Oatmeal Cookies

These butterscotch oatmeal cookies win over just about any cookie lover with its crispy exterior and chewy inside; without a raisin, nut or chocolate chip in sight. Plus, they have a little added crunch and caramel flavor from the toffee bits. It's the sprinkling of sea salt on top that really seals the deal though!
