Date & Cinnamon Smoothie
I normally love using bananas as a sweet thickener in smoothies but some people (read: my husband) are allergic and need an alternative. I recently fell in love with Medjool dates and found they make a wonderful addition to smoothies! They're incredibly sweet and have a warm, mild taste, similar to vanilla. It pairs naturally with similar notes, like nutmeg and maple, but also spicier cinnamon.
I amped up the nutritional value by blending in frozen, riced cauliflower and hemp hearts (for protein). The veggies are so bland, you really won't notice a difference in flavor, but if you have someone who just cannot deal… substitute the same amount of ice.
You'll find this cold & creamy smoothie pleasantly different from the typical green or berry smoothie, but just as satisfying!
Ingredients:
1 cup non dairy milk (we like oat milk)
1 cup frozen riced cauliflower
6 Medjool dates, pitted
1/4 cup hemp hearts
1-2 Tablespoon maple syrup (to preference)
cinnamon, to dust on top
Directions:
Combine all ingredients except the cinnamon in a blender. Start on low speed, to incorporate, then increase speed to high and mix for 1 minute until smooth. Pour into 2 glasses and dust the top with cinnamon. Enjoy!
Yield: 2 servings.
