You wanna make one of the easiest meals ever, pay next to nothing, and have your family sing your praise? Don't we all?  Well look no further, I've got you covered.

Here's an easy recipe that you can toss in the oven after work, and sit down to eat it within the hour. I love that there's no marinate time,  or trimming, stuffing, etc. Just drizzle a quick mixture over the top and bake in a preheated oven for about an hour.

Big ol' dinner salads give me life! They are versatile, filling, and usually quite healthy. I love that it comes together in minutes with very little cooking time (if any) or clean up required.  All those extra minutes and calories saved can now be used for better things... like making s'mores or family game night.  Or both!

Spice Rubbed Steakhouse Style Chicken Wings in Your Pressure Cooker

What’s not to love about a cold pint of your favorite beer and a giant pile of tangy and spicy chicken wings? How about the calories from the deep fried batter? Or the embarrassment of eating them... sauce smeared on your face and fingers?  AND that you have to leave the comfort of your own home to get them, while paying a ridiculous price?! Well, here’s the answer to all those problems... pressure cooked wings tossed in a special steakhouse spice mix! You’ll still have the sauce smeared fingers, but at least you’ll be surrounded by your own friends and family. 

Fall-Off-The-Bone Crockpot Chicken Wings

These wings are so incredible, they're slow cooked all afternoon for fall-off-the-bone tenderness in a mouthwatering hot sauce and butter combination. I especially love that they aren't  deep-fried (way healthier, right?) They're also never under cooked or dried out; just the most delicious chicken wings outside of your favorite sports bar! Plus they could not be easier to make.

Rochester, New York has several claims to fame, but one of my favorites is Chicken French. Thin cutlets are breaded in egg and flour and then bathed in a lemon, wine and butter sauce. The silky texture and intoxicating aroma are part of what make this an unmistakable Rochester comfort food! 

Slow Cooked Chicken Cacciatore

Everyone in my home is headed back...back to work and back to school. That means back to a schedule too. Crockpot meals always help get me on track when trying to reclaim time (and my waistline)! This mouth watering make ahead meal has lots of flavor from long strips of bell peppers & onions, plus red wine, garlic and crushed tomatoes. There was more than enough for our large family AND some to freeze for another meal later in the month. This slow-cooked Chicken Cacciatore is delicious, healthy & easy. Dinner doesn't get much better than this!

BBQ Pulled Chicken Nachos

Transforming leftovers into something my family can get excited about is a bit of a challenge, but it CAN be done quickly and tastefully by turning  them into a delicious appetizer! I used shredded barbecue chicken, grabbed a bag of tortilla chips and smothered it all in pickled jalapeños, black olives and melty cheese! Dinner is done, clean up is easy & all family members are happy!

It's a few days after Thanksgiving and we are stuffed from overindulging during holiday festivities.  There are still leftovers in the refrigerator but the dry turkey sandwiches just aren't cutting it anymore.  Any of this sounding familiar?  I found the best way to use up any leftover roasted turkey or rotisserie chicken is by using it in a soup!
