These bite sized fritters are packed with sweet apples & fragrant spices, then coated in a maple glaze that crackles when you bite into it. If you're going to splurge on a fried (gasp!) donut, this should be the one! I love to serve them when they are still warm, with either a cold glass of milk or my favorite morning coffee blend!
I wanted to tweak an old standby by turning a traditional carrot cake into kid-friendly cupcakes but with the "adult" cream cheese frosting. I reduced the amount of sugar needed by adding shredded Fuji apples to the mix and loads of fragrant spices. Whipped cream was whipped with cinnamon and folded into the classic, dense cream cheese version creating a light, dreamy texture.

This old fashioned apple salad is sweet, a bit tart and a little nutty...just like my grandma was! She would served it as a side dish at dinner, especially on leftover night, as a way to use up remaining fruit before it bruised. I always loved to eat it as the main course at lunch!
