Grandma's Waldorf Salad

When you live in Upstate New York, it's not uncommon to have apples at least once a day from summer through fall. My grandmother would often serve this simple & satisfying apple salad to round out those meals filled with grilled chicken, burgers and pork roasts. I love that it can be prepared in less than 10 minutes and no hot oven is required!  I will sometimes have it for lunch instead of a green salad or even as my dinner when the kids have sports. The boys are pleasantly surprised when they open their lunch boxes and get this instead of a sandwich! Grandma always added fresh diced celery, but I don't usually have that on hand. (The kids always eat it up with a scoop of Nutella before I can get around to adding it into anything else!) We have been waiting all year for the Envy apples to come back to the supermarket. They are the perfect snacking apple but I find them delicious in this salad as well since they are so crunchy and sweet! Grandma was always partial to Macintosh, which is widely found in New York State. It's a good substitute, but it's a little bit softer. What ever the variety you choose, I'm sure you'll come to love this Waldorf apple salad just as much as our family!

Ingredients: 

  • 1 large apple, diced 
  • 1/4 cup mayonnaise 
  • 2 Tablespoons dried cranberries  
  • 2 Tablespoons walnuts or pecans, chopped
  • 1 celery stalk, diced

Directions:  

Mix all ingredients together. Refrigerate until serving, will last 2-3 days. Plain Greek yogurt can be used in place of mayo for those who have an aversion to it.
