Wild Blueberry, Banana & Almond Smoothie
It’s the first day of summer vacation and these kids are starving! Getting off on the right foot, I want to give them all the yummy nutrition. No sugar cereals or syrup soaked pancakes today… and no time for eggs. We have things to do!
I made them this wild blueberry, banana and almond smoothie. It’s packed with frozen cauliflower for added nutrition, which is virtually tasteless and acts just like ice cubes. A banana gives it some light sweetness and creaminess. I like to use wild blueberries because they’re smaller and blend easier. Almond butter really helps make it filling, gives added protein and has a wonderful flavor! I finished off with a scoop of collagen peptides for bone & gut health and unsweetened almond milk. (Be sure to check your label for Whole 30 approved ingredients.)
According to the (Whole 30) guidelines, smoothies are somewhat frowned upon, but in a pinch, make sure it’s veggie heavy. You can always add a handful of spinach, some frozen butternut squash cubes, flaxseeds or chia seeds. All my boys CRUSHED IT!
Ingredients:
- 1 cup frozen wild blueberries
- 1 cup frozen cauliflower florets
- 2 Tablespoons no sugar almond butter
- 2 cups unsweetened vanilla almond milk
- 1 ripe banana
- 1 scoop collagen peptides
Directions:
Purée all the ingredients in a blender until smooth. Enjoy!
Makes 4-5 (8 ounce) servings.
