Chewy Chocolate & Raspberry Crumb Bars
Just when you think you've tried them all, here's a dessert bar with a twist! Not only is there tart raspberry jam swirled into the chocolate morsels, but there's a chewy texture too...as if they're made with caramel. The secret is the sweetened condensed milk that's melted together with semi-sweet chips! They smell heavenly right out of the oven, but trust me when I say they are even better when refrigerated. That's when all the chewy goodness happens!
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups all purpose flour
- 1/2 cup lightly packed light brown sugar
- 1/4 teaspoon salt
- 1 (12 ounce) package semi-sweet chocolate chips, divided
- 1 (14 ounce) can sweetened condensed milk
- 1/3 cup seedless raspberry (or blackberry) jam
Directions:
Preheat the oven to 350°F. In the bowl of a stand mixer, beat the butter until creamy. Add the sugar and salt until incorporated. Slowly add the flour until well mixed. Press only 1 3/4 cups of the mixture in the bottom of a 9x13" pan and bake 10-12 minutes (reserve the remaining mixture until later) until golden brown. Meanwhile slowly heat the condensed milk and 4 ounces of the chocolate chips together, stirring until smooth. Pour the mixture over the baked bottom crust. Drop the jam by the teaspoon over the melted chocolate mixture and then crumble the remaining dough over all that. Finally, sprinkle the leftover 1 cup chocolate chips and bake for another 25-30 minutes. Cool or refrigerate and cut into bars. They are fairly sweet and highly addictive, so beware!
